I like Nucleo tiles because of their simplicity and price. I have had the previous version, F767ZI, for 3 years and have done 2 projects on it. Even if the processor happens to get killed, it can be replaced. You can feel the power of the processor running at 480MHz. For comparison, a Mandelbrot fractal on a QVGA display takes 374ms. The previous F767 (218MHz) took about 700ms. The downside of these boards is the poorly thought-out Arduino connector. It's there, but for example, the port for the display is a compilation of bits from different ports, so to connect some Arduino equipment, in my case a display, you have to write a bit translation function. Additionally, F767 and H755 use different port bits, so each version requires a separate translation function. For me, the surprise and the first difficulty to overcome was the cooperation between cores. I have never written code for multicore controllers. The power supply is also much more complex, a separate LDO and step-down converter in the controller, different core supply voltages. It's a bit harder, but you get what you pay for. Overall, after a few days of fun, I am satisfied.
